I changed Fullscreen, Window mode and resolution. Now its all messed up and I can't see windows when I open them from the tool bar. I just want to reset options back to defaults. Yes, I have tried changing resolution smaller and larger.
2nd question. The main reason I was trying to change resolution is I wanted larger text .. is there a better way to get larger text?

How do I reset my UI? Windows are off screen.

Have you tried starting in safe mode? I'm not really sure what it does but it seems like something to try.
(Start launcher --> Options... --> Start in Safe Mode)

You could try scaling your UI in GUI and Windows Options and see if that helps.
